Pasta with mushrooms

Here's a simple recipe for pasta with mushrooms:

Ingredients:

  • 250g pasta (your choice, like spaghetti or penne)
  • 200g mushrooms (such as champignon, shiitake, or portobello)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 onion, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Chopped parsley for garnish (optional)

Instructions:

  1. Cook the pasta in salted water according to package instructions. Reserve a bit of the pasta water.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the onion and garlic, sautéing until soft.
  4. Add the mushrooms and cook until golden and any moisture has evaporated, about 5-7 minutes.
  5. Season with salt and pepper to taste.
  6. Drain the pasta and add it to the skillet with the mushrooms. Toss to combine, adding a bit of reserved pasta water if needed to loosen the mixture.
  7. Serve hot, topped with Parmesan cheese and parsley if desired.
